Purpose: This study examines the effects of a feeding assistance education on care providers¡¯ knowledge and performance of feeding assistance along with dysphagia risk, eating behavior, eating satisfaction, amount of meals and nutritional status of elderly patients in a geriatric hospital.
Methods: A one-group pretest-posttest design was used. A total of 39 care providers and 50 patients aged 65 years or older in S geriatric hospital in Gyeongsangnam-do were enrolled. The intervention was feeding assistance education, comprising 2 lectures and clinical practice. Data were collected using questionnaires and analyzed using SPSS 19.0.
Results: Care providers exhibited significant improvements in knowledge and performance of feeding assistance (p<.001). Patients¡¯ dysphagia risk significantly decreased (p<.001), but eating behavior and eating satisfaction did not significantly change. Although amount of meals significantly increased (p<.001), nutritional status did not improve.
Conclusion: Care providers for the elderly need feeding assistance education to increase their knowledge and performance of care. Furthermore, frail elderly adults need effective intervention at mealtimes to improve their eating behaviors and nutritional status.
